And you thought a reuben couldn’t get any better! Just you wait until you try one loaded up with latkes… I mean, are potatoes ever a bad idea?

Vegetarian Latke Reuben

Ingredients:

Rye Bread
Swiss cheese
Leftover coleslaw
Leftover latkes
Leftover sauerkraut
Sir Kensington’s Special Sauce

Directions:

  1. Toast two slices of rye bread
  2. While the bread is still warm, start building your sandwich by putting swiss cheese on bottom bread so the cheese begins to melt.
  3. Continue to build the sandwich by adding coleslaw, leftover latkes (2-4 depending on the size of the latkes), sauerkraut and Sir Kensington’s Special Sauce. Top with other slice of toasted rye bread.
