Ingredients:
1 can whole kernel sweet corn (water drained)
1/4 cup Sir Kensington's Avocado Oil Mayonnaise
1 tsp sugar
1/2 cup shredded mozzarella cheese
Salt and pepper
Tortilla chips for serving (optional)
Instructions:
-In a bowl, add avocado oil mayonnaise, sugar, and a pinch of salt and pepper, mixing until well combined
-Stir in the can of sweet corn kernels (drained) and half of the shredded mozzarella cheese with a spatula
-Pour the corn mixture into an oven-proof dish and add the rest of the shredded mozzarella cheese on top
-Put into a 350°F preheated oven for 5-10 minutes until all the cheese has melted
-Remove from the oven and serve right away with some tortilla chips or enjoy spoonful's straight from the dish!
